Au pied de l’ancien palais épiscopal de la Berbie à Albi (XIIIe siècle), plutôt massif, s’étend un jardin à la française (du XVIIe) nettement plus délicat. C’est d’ailleurs un curieux aménagement paysager, avec des topiaires sophistiqués dessinant sur du gravier blanc des motifs qui frisent le labyrinthe (gardener for scale, on ne risque toutefois pas de s’y perdre). Il est classé “jardin remarquable”, ehui. Mars 2022.

Vue en contre plongée d’une construction ancienne en brique rose massive rappelant un peu une forteresse du Moyen-Âge. Au pied de celle-ci, des buis taillés avec art dessinent des motifs sophistiqués.

A mature fastigiate yew tree clipped into an egg shape with a band cut into it at one third height affording a view through the tree for drivers and occupants of the house behind. A street sign at knee level is also accomodated by the yew tree by topiary. The house is an old post and beam building.

Our waitress was incredible, and loved to talk about the food. We got so much info from her.

Oyster mushroom with sweet potato puree, fennel and chilli crisp (home made). One of our several favourites. The mushroom!!!

Celeriac schnitzel, buttermilk dressing, fennel oil, a slaw thing. Celeriac! Yes!

Cucumbers, forget how they were treated, anjo blanco, crispy onions, society garlic.

The dish of the meal. Extraordinary. Charred strawberry cheesecake with spiced almond crumble. The chef came out to present this dish and talk to us about it.

Three topiary piggies in a woodchipped garden. The pigs are looking in different directions. On the left there's a side view of the green pig standing on a long, plastic planter with an old, low brick-wall behind. In the centre the leafy pig is looking at the camera. On the right and slightly behind the centre pig another one can be seen looking to the right. In the background there's a very old brick wall with what might be an old fireplace in it on the left. This may have been from a heated greenhouse in this Osborne House walled garden.
