It's only a few days until my birthday, and the party that goes with it. I've been doing #mixology alchemy to have a bunch of pre-batched bottles of cocktails ready, but also to have some tinctures ready for my guests to customise their drinks with flavours like vanilla, Szechuan peppers, cloves, cinnamon, etc.

And of course I will have to take a break on thurday evening to watch #StarTrek #LowerDecks.

The most fun part of #mixology isn't in the mixing of drinks, it's the preparing of custom ingredients.

Every so often, my kitchen looks more like a chemistry lab than a kitchen, while I prepare custom syrups, tinctures, and infusions.

Latest two additions to the "lab" are a magnetic stirrer, and a sous vide cooker.

Yesterday, I was hosting a party and as I like serving #cocktails, but hate being in the bar for a long time every time someone wanted a drink, I decided to prepare 2 bottles of batched drinks.

One was a paper plane, and the other was an Earl Grey MarTEAni, using pseudo-citrus, and gum enriched simple syrup (to eliminate the need for an egg white) to make sure the drinks tasted great the entire night, while being trivial to prepare when the party was going.

It was a great success.

Today I want to introduce you to a spirit you probably haven't heard of so far. It's a type of Japanese Shochu, which is known somewhat internationally. This one, however, is a rare kind: It's Kokuto Shochu, made from brown sugar and almost exclusively produced on the Amami islands off the coast of Kagoshima in Japan.

"Wait, sugar....isnt that rum?", you might ask. The answer is: kind of, but the details matter. While rum is made from sugar cane juice or molasses with baker yeast, Kokuto Shochu is made from brown sugar, water and koji yeast - the one used for shochu or other fermented products in Japan. This gives it a very special flavor, akin to rum, but way more mellow! Unfortunately, it is not too abundant outside of Japan (and the good brands are usually sold within the country). However, if you get your hands on one of those, it's worth trying!

Here's a small cocktail you can make with it, I call it a KB-Quiri.

2 oz Kokuto Shochu
0.5 oz Banane du Bresil Liqueur
0.75 oz Lime Juice

Shake on ice, strain into a coup and enjoy!

Half barspoon of horseradish sauce
A pinch of salt

Just what you need to be satisfied without getting fat.

30ml light Cuban rum
30ml cognac
30ml triple sec
10ml lemon juice
A scant barspoon of simple sirup
3 drops of saline solution

Shake&Strain in a chilled coupe and garnish with a lemon twist.

I love brandy cocktails, and I love rum, so this one is one of the best I've ever made myself.

45ml Gin
22,5ml Vermouth Bianco
22,5ml fino #sherry
4 dashes of olive brine
120ml tonic water

Build in a fancy glass full of ice, top with tonic and garnish with an olive.

Torn between a #dirtymartini and a #gintonic? Have both!
A fun one, highly recommend!

5ml Cap Corse grande reserve quinquina blanc (upped to 10ml)

A savory take on the Vesper.
Highly recommended for a great Saturday evening.
